If you've never heard of Chakhokhbili your dinner table and your belly have been missing out. It's a delicious traditional Georgian chicken dish made with stewed tomatoes and onions but with added kick of adjika chili paste and fresh sliced herbs. The name comes from the Georgian word “khokhobi” which means “pheasant,” but nowadays it is most usually made with chicken. Traditionally, a whole chicken, cut into pieces with the skin left on, but it's easier to make with cut up chicken legs that soaks in all the flavors and the meat remains succulent and juicy throughout the cooking process. For sides we're doing good ole potatoes but wait until you hear about the seasoning - SVANETIAN salt. This genius flavoring takes salt to a whole new level with beautiful spices like dried coriander seeds, dried dill, fenugreek, marigold and lots of fresh garlic.
