Service Description

I've always said on the subject of pie, that pie crusts are like dogs. They smell fear! Using methods and techniques that will guarantee a no-fail pie crust, we overcome all niggling doubts and fears when rolling pin hits the pie dough. For this particular apple pie, we head to the Alsace region in France that is not only notable for its wines and picturesque towns (like Colmar) but also its fruit tarts. These are usually rich with a custard of heavy cream, eggs and flour in which fruits are nestled. Delicious but heavy! In our version which is equally delicious {I must add}, our apple tart will be made lighter with the addition of some ground almonds instead of all flour and a mixture of milk and cream in the custard. A touch of pure magic is the addition of fresh ground cardamom that I began adding to this pie recipe over a decade ago and simply never stopped!
